Sorbic acid has two types: sorbic acid and potassium sorbate. Sorbic acid is white to light yellow scaly crystals, crystal particles or crystal powder, odorless or slightly odorous. It is easy to absorb moisture, decompose and change color when exposed to air for a long time. Sorbic acid is insoluble in water and must be dissolved in ethanol or potassium bisulfate before use.

Use

Sorbic acid is a preservative in food and beverages. It is effective against a wide range of microorganisms, including molds, yeasts, and bacteria. Sorbic acid and its salts (such as potassium sorbate) are widely used to preserve a variety of foods including cheese, bread, yogurt, dried fruits, and beverages.
It inhibits the growth of mold and yeast in cosmetic products and pharmaceuticals.
Sorbic acid can be added directly to the dough, the dosage is 0.1%-0.15% (based on dough).
Regulation
Sorbic acid is generally recognized as safe (GRAS) by regulatory bodies such as the FDA and EFSA.
