Potassium Bitartrate is a leavening agent. It is a key component of compound leavening agents. It reacts with sodium bicarbonate to produce carbon dioxide, which makes baked goods rise.
It is also an acidulant with a pleasant sour taste. Its acidity is about 1.3 times that of citric acid, which amkes it adjust the acidity of fruit juice beverages. As a buffer to stabilize the pH of food, Potassium Bitartrate can prevent excessive changes in pH, and ensure the normal progress of fermentation.
Medical
In the medical field, Potassium Bitartrate has certain medicinal value. It is approved as a Class III over - the - counter drug in Japan and can be used as a laxative.
